Low Carb Strawberry Jam

Fruity and delicious Strawberry Jam.

Store bought Jam is full of sugar, so if you are watching your carbs, this is a good substitute. Strawberries are already sweet and they can be turned into Jam so easily.

I use Chia Seeds to thicken this Jam. It is delicious on low carb biscuits or low carb waffles. I like a good PB&J every once in a while too!

LOW CARB STRAWBERRY JAM

Ingredients:

  • 1 Pound Fresh Strawberries
  • 2 Tablespoons Chia Seeds
  • 2 Packets Stevita Extra Sweet
  • Juice from Half of a Lemon

Directions:

1. Wash the Strawberries. Remove the stems and leaves. Quarter the Strawberries then put them in a medium size sauce pan.

2. Place the sauce pan on the stove with heat on low. As the Strawberries begin to cook and soften, mash them with a potato masher. The juice will release from the Strawberries as you mash them.

3. Sprinkle the Stevita packets over the Strawberries and add in the Lemon Juice.

4. Continue to cook and mash the Strawberries until it gets to the consistency you want. I like my Jam to be slightly chunky, so that when you take a bite you get the natural Strawberry flavor released. If you prefer a smoother Jam, pour the Strawberries into a blender and blend for one minute then transfer the Strawberries back into the sauce pan. Once a proper consistency of your liking, stir in the Chia Seeds and remove the pan from the heat. Let the Jam cool for about 15 minutes. During this time the Chia seeds will expand and soak up some of the Strawberry Juice. This will thicken the Jam.

5. After 15 minutes, transfer the Jam to a glass jar. Don’t put the lid on until the Jam has completely cooled. Then put the lid on tightly and store the Jam in your refrigerator. This recipe makes about 2 Cups (16 oz.) of Jam. It will keep in your refrigerator for several weeks.
